Start with the core loop — the one journey a user must complete for the product to deliver value. For a booking app, that's finding and reserving a slot. For a fintech tool, it's moving money safely. Build that path end-to-end, make it excellent, and park everything else in the version-two list.

Analytics, session recordings, and direct conversations with early users will contradict some of your assumptions — that's the whole point.
